There are several Brampton assembly videos out there but this one focuses on the Demon. What amazes me is how these cars just snap together. Especially the external body pieces. No fasteners required. Even some stout Mom types doing the some of the work.

I've always wondered about keeping color-matched panels/bumpers/doors together in a production environment like that...

They take the doors off after the car is painted. They were held on with temporary nuts for painting. The doors are taken somewhere else and options/glass is installed. Somehow they are waiting for the car as it comes down the assembly line. They must put a marker paper on the doors so it can be matched to car. Notice how the nuts/washers on the door hinges are not painted. This is why!

That is what I suspected for the doors, but how do they handle the bumper covers?

I swear I've seen paint booth video without them...

I don't know, but if you look at the bumpers they're always a different shade. I thought that's because the urethane took the paint differently than the metal. But now I'm thinking maybe they paint urethane parts completely off car in separate area with same paint code but it's never gonna be exact match to car they're matched to (esp. metallic), because it's a different batch of paint?

As I recall, RS once said they are painted off-site. The paint for plastic parts is different than the metal parts. It can be made to match, but FCA seems to do a poor job of it.
The bumpers on my Durango seem to be a lot closer in color than my Hellcat.
